Brown Rice Pudding

Serves: 6

   1 2/3 cups water
   2/3 cup brown rice
   2 large eggs
   1/3 cup agave
   1/4 teaspoon salt
   3/4 cup milk
   1 cup plain yogurt
   Nutmeg or cinnamon

Brown Rice Pudding is from the Cook'n with Agave collection.

In medium saucepan, bring water to a boil. Stir in rice. Cover. Reduce heat and simmer until rice is tender (about 35 minutes). Beat together eggs, agave, salt and milk. Stir in yogurt and hot rice. Pour into 1-quart baking dish. Sprinkle with nutmeg or cinnamon. Set dish in pan of hot water. Bake at 350°F, 50 to 60 minutes or until barely set. Cool. Top each serving with desired accompaniments.
