Bran Muffins

Serves: 16

   3 eggs
   1/2 cup agave
   1/2 cup salad oil
   3 1/2 cups 100% whole bran cereal
   1 1/2 cups milk
   2 1/4 cups flour
   4 teaspoons baking soda
   1 teaspoon cinnamon

Bran Muffins is from the Cook'n with Agave collection.

Beat eggs, agave and oil in small bowl until blended; set aside. Combine bran cereal with milk in large bowl; let stand 5 minutes. Add egg mixture to cereal mixture and mix lightly. Combine flour, baking soda and cinnamon in medium bowl; mix well. Stir into bran mixture. Do not over mix. Spoon batter into paper-lined or greased muffin cups.

Bake at 350°F for 25 to 30 minutes or until wooden toothpick inserted near center of muffin comes out clean. Remove from pan; cool slightly on wire rack. Serve warm.
