Agave-Balsamic Medallions Of Pork

   8 center-cut thick pork chops, boned and all visible fat trimmed
   1 egg
   1/2 cup sesame oil
   1 cup balsamic vinegar
   1/4 cup agave
   1 tablespoon steak sauce
   2 teaspoons salt
   1/4 teaspoon freshly ground black pepper
   Paprika, to taste
   Minced parsley, to taste

Arrange pork medallions in 9 x 13 x 2-inch baking pan. In small bowl, beat egg; add oil and beat again. Stir in vinegar, agave, steak sauce, salt and pepper. Using fiber brush, baste medallions with sauce. Bake at 350F for 50 to 60 minutes or until tender; turn and baste medallions every 15 minutes. Spread with any remaining sauce during last 15 minutes. Place on warmed platter. Sprinkle with paprika and parsley to taste.
